Salads

I get asked a lot to share my salad recipes but to tell the truth I don't have a recipe and really there is no need for one!! So here is my list of things to have on hand to come up with your own invention.





Dark green leafy stuff; spinach, lettuce, bitter greens ect.
Nuts and seeds; sunflower, sesame, almonds, cashews ect.
Some sweet: craisins or raisins or fruit of some kind, pineapple, apple, strawberries
Some crunch; dried won tons, Chinese noodles, croutons
sprouts of any kind
Cheese; feta and Parmesan are my favorites
Dressing; I like to use my pampered chef salad dressing maker and adjust the sugar to agave or stevia, along with a healthy oil. Asian, Poppy seed, French, Honey Mustard are some of my favorites.

Today my invention was about 3 cups of spinach, 1/2 cup brown rice warmed up just a bit,a sprinkle of feta cheese, won tons, sunflower seeds, crasins, alfalfa sprouts, and the rest of my sprout mix. I used a poppy seed dressing. I put it in a bowl and mix it all together. This was a whole meal all on its own and very filling.

Maikuan Salad

4 Broccoli Spears -cut in chucks
1 Head Cauliflower- cut up
2 Cucumbers-diced
3 Carrots- grated
1 Can Black Olives- cut up
Marinade- Maiduan Seasoned Gourmet Rice Vinegar, 2 T. Olive Oil
Mix all ingredients and chill in fridge.  Toss to coat.   YUM!

Broccoli Salad
1 head Broccoli
1 cup diced Celery
4 chopped Scallions
1 large Red Onion, chopped
1/3 cup Parsley Dressing or Flax Oil Dressing

Cut raw broccoli into bite-size pieces. Mix all ingredients, chill one hour.
